- 1 Tbs Olive oil
- 2 Tbs Red onion, finely diced
- 2 Tbs cilantro stems
- 1 cup lentil sprouts
- pinch salt and fresh black pepper
- 0.5 cup Spinach, washed and disinfected
- 0.5 cup Corn, seared
- 1 cup Cherry tomatoes, halved
- 2 mangos
- 1 tsp Chili powder

1. Heat the oil in a pan and add the red onion and cilantro stems. Sauté for a few minutes until the vegetables are softened and add the lentil sprouts. Cook for a couple of more minutes and season with salt and flower.
2. Mix the lentils with spinach, corn and cherry tomatoes.
3. Serve in bowls and top with mango batons. Sprinkle with chili powder.
4. Share and enjoy.
1. You can make your own sprouts at home. Cover lentils with water in a jar and close with a cloth. The next day, drain and cover with another cloth. In a few days, you’ll have sprouts.
