- 0.75 c cottage cheese
- 2 tbsp pesto
- Onions, sautéed
- Mushrooms, sautéed
- roasted red peppers, sautéed
- Zucchini, sautéed

- Fresh basil
- Parmesan, sprinkled

1. Preheat oven to 375°F.
2. In a bowl, whisk together 8 eggs, add 3/4 cup cottage cheese, and 2 tbsp pesto for extra flavor.
3. Sauté onions, mushrooms, roasted red peppers, and zucchini until tender in oven safe skillet.
4. Pour egg mixture with the sautéed veggies.
5. Top with sliced tomatoes and fresh basil, and sprinkle Parmesan and feta on top.
6. Let set for a 2 minutes.
7. Bake in oven at 350 for 15- 25 minutes or until the frittata is set (depending on oven).
8. Serve and enjoy.
