- 1 Large eggplant, cut in 4 thick slices
- pinch salt, fresh black pepper and ground oregano
- 2 Eggs, beaten
- 0.25 cup Olive oil
- 2 Potatoes, fried

1. Season the eggplant with salt, pepper, oregano. With a large bottle or a rolling pin, flatten the eggplant.
2. Bread the eggplants coating with flour, then soaking in egg and finally coating with breadcrumbs. Make sure it’s all evenly coated.
3. In a pan, heat the oil and fry the eggplant until its golden brown. Use the same hot oil to dry the potatoes until they are crispy and golden brown. Take them out of the oil and sprinkle generously with salt while still hot. Serve the eggplant slices with potatoes. Share and enjoy.
