- 1 russet potato
- 0.5 Eggplant, small
- 0.5 Onion, small
- 1 c Spinach, chopped
- 0.667 c Chickpea flour
- 0.333 c water
- 1 tsp Salt
- 1 tsp red chili powder
- 1 tsp chaat masala
- 0.5 tsp coriander powder
- 0.5 tsp cumin powder
- Oil, to fry

1. Chop vegetables in strips.
2. Mix in a bowl with the rest of the ingredients.
3. Adjust chickpea flour and water as needed to get a thick batter consistency, but make sure you don’t do too much batter as you want the veggies to shine.
4. Heat oil in a wok to 350F.
5. Spoon in the pakoras using a large tablespoon, and fry for 7-10 min until golden brown.
6. You’ll need to do this in 2 batches.
7. Serve pakoras with more chaat masala and imli (tamarind).
8. Enjoy!
