- 1 c sliced shiitake mushrooms
- 1 c shredded carrots
- 0.5 c shredded bamboo shoots
- 0.5 pack tofu, sliced
- 1 tbsp Dark soy sauce
- 1 tbsp regular soy sauce
- 2 tbsp vinegar
- 1 tbsp crushed black pepper
- 6 c Vegetable stock
- 3 tbsp Corn starch, +4 tbsp water
- 2 Eggs, beaten
- 0.25 tsp hot chili oil
- sliced green onion

1. Fry the tomato for a minute on high heat with a tbsp of sesame oil.
2. Then add in the bamboo shoots and carrots.
3. Fry for a couple of minutes before adding in the stock.
4. Then add pepper, dark soy sauce and cover for 15 minutes.
5. Finally add mushrooms.
6. Bring it to a boil and simmer for 10 minutes.
7. Then add cornstarch slurry and let it cook for 10 minutes.
8. In goes the vinegar. Mix.
9. Turn off the heat before adding in 2 beaten eggs.
10. Garnish with chili oil and green onions.
