Ingredients

Dry Ingredients
- 2 c oat flour
- 2.5 tsp Baking powder
- 0.75 tsp Cinnamon
Wet Ingredients
- 1 c Medjool dates, soft
- 1.5 c water
- 0.5 c Orange juice, freshly squeezed
- 1 tbsp Orange zest
- 0.333 c applesauce
- 0.5 c cranberries
- 0.5 c Blueberries
- 1.5 tsp vanilla
Glaze
- 2 tbsp Orange juice
- 0.5 c date paste

Directions

Preparation
1. Preheat oven to 350 and line the loaf pan with parchment paper.
Dry Ingredients
1. Combine dry ingredients in a large bowl.
Wet Ingredients
1. Add dates and water into a high-speed blender and blend until smooth.
Combine Wet and Dry Ingredients
1. Add 1 ½ cups of previously blended date paste to your dry ingredients.
2. Continue to add orange juice, orange zest, applesauce, and vanilla to your dry ingredients and mix until combined.
Add the Berries
1. Fold in cranberries and blueberries.
Bake the Loaf
1. Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
2. Let cool for 10 minutes before removing from the pan.
Prepare the Glaze
1. Make the glaze by combining 2 tbsp of orange juice with the remaining half a cup of date paste.
2. Mix to combine.
3. Drizzle glaze over the loaf.
4. Enjoy!
