- 145 grams Egg whites
- 42 grams Sugar
- 36 grams Cake flour
- 15 grams ube powder
- 5 grams Milk
- 1 tbsp Honey
- 1 tsp Butter
- 80 grams Egg yolks
- 2 tsp ube extract
Chantilly Cream and decoration
- 200 grams Heavy cream
- 35 grams Granulated sugar
- 100 grams fresh fruit

1. Whip the egg whites until frothy. Slowly add in the sugar while mixing and keep mixing until they are stiff peak. Set it aside.
2. Whip the egg yolks, ube extract, honey, butter and milk. Sift the flour and ube powder together in a separate bowl.
3. Alternating between the meringue and the dry ingredients, gently fold the ingredients into the egg yolk mixture in stages until all the ingredients are mixed together.
4. Spread the batter on a lined baking sheet pan. Bake at 355F for 7-8 minutes and let cool.
5. On high speed, whip the cream with the sugar until it comes to a stiff peak consistency.
6. Cut the desired shape from the cake and layer and decorate accordingly. Enjoy!
