- 5 Eggs, separated
- 130 grams White sugar, divided into two
- 80 grams Oil
- 125 grams All purpose flour
- 1 tbsp Vanilla extract
- 1 tsp ube extract
- 2 tbsp ube powder
- 0.5 tsp Baking powder
- 1 can Full fat coconut milk, Refrigerated
- 100 grams Heavy cream
- 50 grams White sugar

Directions

Method
1. Separate eggs. Whip the egg whites until frothy and slowly add in the first half of the sugar. Mix until it is stiff peak.
2. Whip egg yolks with the next half of the sugar. Once fluffy and light, whip in the ube extract and oil with the mixture.
3. sift the dry ingredients. fold in the egg whites and dry ingredients alternating between the two. Spread on a sheet pan and bake at 325F for 8-12 minutes .
4. Before it cools down completely, transfer and flip the cake to a parchment sheet and sift a layer of icing sugar on the side facing you. Roll the cake while it is still hot and wrap in towel to keep it warm while you prepare the cream.
5. Scoop the cream part of the separated refrigerated coconut milk and place with a bowl of heavy cream and sugar. Whip until it is stiff peak.
6. gently unroll the cake and spread a layer of the coconut cream, covering the whole layer.
7. Using the parchment as your guide, roll gently until you reach the seam of the cake. Slice the two openings to get a clean roll. Enjoy!
