- 450 grams Cream cheese, room temperature
- 130 grams Sugar
- 3 Eggs
- 1 Egg yolk
- 275 grams Heavy cream
- 25 grams Cake flour
- 2 tsp ube extract
- 2 tbsp ube powder

1. Beat the sugar and cream cheese together until smooth and the sugar is all dissolved. Add one egg at a time and continuously mix until it is thoroughly mixed together.
2. Add the ube extract until it is thoroughly mixed through. In a separate bowl, mix the flour, ube powder and 1/4 of the cream together, gradually adding more as it gets mixed in.
3. Mix the cream and flour mixture into the cream cheese mixture and whisk vigorously to ensure it is all combined. Pour in a parchment lined 7 inch diameter baking pan.
4. Bake the cheesecake at 460F for 30-35 minutes, or until the middle is jiggly. Let cool and then place in the fridge for at least two hours.
