- 2 tbsp Olive oil
- 1 tbsp Garlic, minced
- 0.5 large white onion
- 5 celery ribs
- 0.5 c peas
- 0.5 c Carrots, chopped
- 1.5 lb petite gold potatoes
- 0.5 tsp pink Himalayan salt
- 0.5 tsp coarse black pepper
- 2 tsp Turmeric, to taste
- 3 c chicken bone broth
- 3 tsp Parsley, separated, 2 tsp in stew, 1 tsp for garnish
- 2 cups turkey, cooked, chopped

Preparation of Stew
1. In a Dutch oven, heat olive oil and garlic until fragrant, about 2 minutes.
2. Add onions, celery, and carrots.
3. Sauté until onions are translucent, about 8 minutes.
4. Add potatoes, turkey, peas, seasonings, and bone broth.
5. Bring to a boil.
6. Put a lid on and let stew simmer for 1-4 hours and serve.
7. Top with fresh parsley, enjoy.
