- 1.5 inch turmeric knob
- heaping teaspoon ground dried turmeric
- 1 inch ginger knob
- 1/2 teaspoon ground dried ginger
- 0.75 c Onion, chopped
- 2 clove Garlic, peeled and bashed
- 0.25 c Fish sauce
- 2 tbsp Coconut oil
- 1.5 lb Pork tenderloin, cut into slices about 1/4 inch thick
- 10 wooden skewers
Thai Basil Dipping Sauce (or Prik Nam Pla)
- 1 tbsp Thai holy basil
- 1 tbsp Cilantro, chopped
- 2 tbsp Fish sauce
- 2 tsp Sugar, or sugar alternative
- 4 tbsp Lime juice
- 1 clove Garlic, peeled and minced

Prepare Marinade
1. In a blender or mortar and pestle, combine turmeric, ginger, onion, garlic, fish sauce, and coconut oil.
2. Blend or grind into a smooth marinade.
Marinate Pork
1. Place pork slices in a bowl and coat with the turmeric-ginger marinade.
2. Allow it to marinate for at least 30 minutes (or longer for other cuts of pork).
Preheat Grill or Grill Pan
1. Preheat your grill or grill pan to medium-high heat.
Skewer the Pork
1. Thread marinated pork slices onto the soaked wooden skewers.
Grill the Skewers
1. Grill the skewers for about 2-3 minutes per side or until fully cooked and slightly charred.
Prepare Dipping Sauce
1. In a bowl, mix Thai holy basil, cilantro, fish sauce, sugar, lime juice, minced garlic, and chili to taste.
2. Set aside.
1. Arrange skewers on a platter, garnish with optional lime wedges, chili, and green onions or cilantro.
2. Serve with the prepared Thai Basil Dipping Sauce.
