- 8 oz Mascarpone cheese
- 1.5 c Heavy Whipping Cream
- 0.333 c Granulated sugar
- 1 tsp Vanilla extract
- Cocoa powder
- 3 c Espresso
- 1 shot rum, or liquor of your choice
- 24 Savoiardi

Brewing and cooling espresso
1. Brew espresso and let cool.
Preparing the cream mixture
1. Add mascarpone, cream, sugar, and vanilla to a bowl and whisk (by hand or stand mixer) until the mixture holds a peak.
Preparing the espresso mixture
1. Add shot of liquor to cooled espresso.
Assembling the dessert
1. Dip Savoiardi in espresso mixture (do this very quickly for about a second or two total! You don't want the cookies to be falling apart) then add cookies to the bottom of the cup.
2. After your first layer of cookies, add a layer of the cream mixture.
3. Repeat steps 4 & 5 until cups are full. The last layer should be the cream mixture.
4. Top with cocoa powder and refrigerate for at least a half hour before consuming. This will allow time for the cookies to soak up more moisture. But if you can't wait, you can eat right away!
