Ingredients

Guacamole
- 3 Avocados
- 0.75 Red onion, chopped
- 3 clove Garlic, crushed
- 0.75 Lime, juiced
- 3 tsp Cumin
- 0.5 jalapeños
- Salt
- Pepper
Salsa
- 0.5 jalapeños
- 0.25 Red onion, chopped
- 2 clove Garlic
- 4 Tomatoes, stemmed, halved, and cored
- Cilantro
Queso
- 1 Tbs Butter
- 1 Tbs All purpose flour
- 1 cup Whole milk
- 4 cup shredded cheddar cheese
- 0.5 can diced chilis and tomatoes
To assemble
- shredded cheddar cheese
- Tortilla chips
- Soft flour tortillas
- Sour cream
- Salt
- Pepper
- Cilantro

Directions

For the guacamole
1. Combine: avocados, chopped red onion, garlic, fresh lime juice, cumin, chopped jalapeño, and salt and pepper to taste. Mix using a fork until desired consistency. Place in a bowl and put cling wrap directly on top of the guacamole and refrigerate until ready to use.
For the salsa
1. In a blender combine: jalapeño, red onion, garlic, and tomatoes. Blend for about 15 seconds. Season with salt and pepper, cover with cling wrap, and refrigerate until ready to use.
For the queso
1. In a medium pot on medium high heat, combine butter and all purpose flour and mix until flour smell has dissipated. Slowly whisk in whole milk until consistency is smooth, and then add shredded cheddar cheese (white or yellow will do).
2. Once you’ve added the cheese, add diced chilis and tomatoes (drained). Mix to combine for your queso.
To create your nacos
1. On a rimmed baking sheet, cover with tortilla chips, then shredded cheese and queso (about ½ the pot) followed by another layer of chips, shredded cheese, and queso.
2. Also add some sliced jalapeños and then place in a preheated oven at 400°F. Cook for about 20 minutes or until golden and crispy.
3. Remove some nachos and chop them into bite-sized pieces. Place on a flour tortilla, cover with guacamole, salsa, and sour cream.
4. Serve and enjoy!
