Ingredients

Millet Recipe
- 0.5 c millet
- 0.5 c Coconut milk
- 0.25 c water
- 0.125 tsp Cardamom, ground
- 0.25 cinnamon stick
- 1 Bay leaf
- 0.5 tsp Cumin, ground
- 0.5 tsp Ginger, fresh*
- 1 clove Garlic
- 0.25 tsp Turmeric
- 0.125 tsp Cayenne
- 0.125 c cashew pieces
- 0.125 c peas
- 0.125 c Carrots, diced
- 0.125 c Raisins, optional
- 0.5 tsp Salt
- Pepper, to taste
Note
- You may sub ¼ tsp of ginger powder for fresh ginger.
- You may sub seed of choice or omit cashews if nut-free.

Directions

Roast the Millet
1. Add the dry millet to a pan on medium heat and dry roast until fragrant and making a crackling sound.
2. Remove the millet and set it aside.
Lightly Roast Cashews
1. Add cashew pieces and dry roast over low heat until lightly golden.
2. Remove from the pan and set aside.
Cook the Millet
1. Return the millet to the pan.
2. Add coconut milk, water, carrots, and spices to a pot.
3. Bring to a gentle boil.
4. Cover and let simmer on low for 20 minutes or until the millet is cooked and the water has cooked out.
5. Remove from heat for 5 minutes.
Finish and Serve
1. Remove the lid and add peas, raisins, and cashew pieces.
2. Fluff the millet using a fork, mixing to combine everything at the same time.
3. Enjoy!
Additional Notes
1. If all the water dries out before the millet is fully cooked, add ¼ cup of water at a time without stirring and keeping it covered.
