- 10 oz Coconut cream
- 3 Lemongrass, chopped
- Ginger, large knob sliced
- 5 Bird eye chili pepper, sliced
- 2 lb Chicken wings
- 4 tbsp Butter
- 1 tbsp Cornstarch
- Cilantro
- thai basil
- 2 tbsp Fish sauce
- 2 Shallots, chopped
- 1 Lime

Making the Sauce
1. Combine the lemongrass, ginger (or galangel), shallots, thai chilies, coconut cream, and fish sauce in a saucepan. Simmer for about 20 minutes
2. Strain out the aromatics and check for seasoning and squeeze in the juice of 1 lime
3. In a sauce pan, combine the sauce with butter and add in cornstarch slurry until thick enough to coat the back of a spoon
Making Perfect Wings
1. Salt your wings at least 30 minutes ahead of time then pat dry with a paper towel.
2. Fry at 270F for about 12 minutes or until cooked through. Very light browning but thats okay!
3. Let the cool completely then fry again at 375F for about 2 minutes or until deeply golden brown and crispy. Let them drain on a wire rack
4. Add your wings to a bowl along with the sauce and toss to coat.
5. Serve with whatever you want! I made crab rangoons for which there will be a recipe on my page.
