Main Dish
- 3 Sweet potatoes, small-medium, peeled and cubed
- 3 c boiled chickpeas
- 1.5 inch Ginger
- 2 clove Garlic
- 2 tbsp red curry paste
- 1 can Coconut milk
- 0.5 c Tomato sauce
- 1.5 c Spinach
- 1 tbsp Olive oil
- 0.25 c toasted peanuts
- 1 c Cilantro leaves

Prepare the curry paste
1. In a small blender, combine peeled garlic and ginger.
2. Add red curry paste and a bit of the coconut milk to get the blade going.
3. Blend until smooth.

1. Heat the red curry sauce in a pan and let it boil for 1-2 minutes until fragrant.
2. Add cubed sweet potatoes and chickpeas.
3. Add the rest of the coconut milk and the tomato sauce, and let simmer until the sweet potato is soft. This should take around 20 minutes.
Final steps
1. In the end, add the spinach and cook for another minute.
2. Garnish with toasted peanuts and cilantro leaves.
