- 1 c fennel
- 4 clove Garlic, minced
- 0.5 c mint
- 0.25 c Italian parsley
- 6 Thai chilies
- 0.25 c lime juice
- 3 tbsp fish sauce
- 2 tbsp olive oil
- 1 tbsp ground Aleppo pepper
- cracked white pepper
- kosher salt
- a finishing salt

Directions

Preparing the Salad
1. In a large bowl combine watermelon, fennel, garlic, mint, parsley, chilies, Aleppo pepper, lime juice, fish sauce, white pepper and olive oil.
2. Mix together well and add salt to taste.
Serving the Salad
1. Serve on a toasted baguette or something of that nature.
2. Garnish with mint, parsley and finishing salt.
