Ingredients

For Marinade
- 0.5 c Olive oil
- 0.5 c Tequila
- 3 Limes, cut in half (using juice and limes)
- 2 oranges
- Cilantro, handful
- 0.5 White onion
- 5 clove Garlic, crushed
Chicken
- 6 Chicken thighs
Seasonings for Chicken
- 2 tbsp sazon
- 2 tbsp garlic adobo
- 2 tbsp Cumin
- 1 tbsp Kosher salt
- 2 tbsp sofrito
- 2 tbsp Onion powder
Cilantro Lime Vinaigrette
- Cilantro, handful
- 0.25 c Red wine vinegar
- 0.5 c Olive oil
- Kosher salt
- 1 lime or lemon
- 2 tbsp Honey

Directions

Preparing the Chicken
1. Place clean, dry chicken in a large bowl.
2. To the chicken add cilantro, garlic, lime juice with limes, orange juice with oranges, onion, tequila, and olive oil. Mix well.
3. Cover and place in the refrigerator for 30 mins - 1 hour.
4. Prepare your grill, setting the temperature to 400°.
5. Remove the chicken from the refrigerator and season with Sazon, garlic adobo, cumin, kosher salt, Sofrito, and onion powder.
6. Rub the grill with a potato, to reduce chances of the chicken sticking.
7. Place chicken and citrus on the grill skin side up first.
8. Cook for approximately 35 - 45 minutes, rotating occasionally and squeezing any leftover citrus juices onto the chicken.
Preparing the Vinaigrette
1. While your chicken is cooking, prepare the vinaigrette.
2. In a container combine red wine vinegar, olive oil, honey, juice of one lime, cilantro, and kosher salt. Use a blender or immersion blender to mix well.
3. Taste your vinaigrette and make adjustments as needed.
Serving the Chicken
1. Once your chicken is cooked and the internal temperature has reached 165F, you can remove it from the grill.
2. Serve with your favorite sides like rice and vegetables.
3. Drizzle vinaigrette all over the top of the chicken.
4. Enjoy!
