Ingredients

Chicken Marinade
- 1 lb Chicken breasts, cut into bite sizes
- 1 tbsp Garlic, minced
- 1 tbsp Ginger, minced
- 1 tbsp Shaoxing wine
- 1 tbsp Soy sauce
- 0.5 tsp five-spice powder
- 1 tsp cayenne pepper powder
- 0.25 tsp white pepper powder
- 1 tsp chicken bouillon powder
- 0.5 tsp Salt
- 0.5 tsp Sugar
Batter
- 1 c sweet potato starch
- 0.5 tsp Baking powder
Garnishments
- Thai basil
- 1 tsp Sichuan peppercorn powder
- 0.5 tsp Chili powder
- 0.5 tsp Salt

Directions

Marinate the Chicken
1. Cut the chicken into bite-sized pieces.
2. In a bowl, mix minced garlic, minced ginger, Shaoxing wine, soy sauce, five-spice powder, cayenne pepper powder, white pepper powder, chicken bouillon powder, salt, and sugar.
3. Toss the chicken in the marinade, covering each piece.
4. Marinate for at least 1 hour or overnight for enhanced flavor.
Prepare Seasoning Mix
1. In a small bowl, combine Sichuan peppercorn powder, chili powder, and salt.
2. Set aside.
Coat Chicken in Batter
1. In a shallow bowl, combine sweet potato starch and baking powder.
2. Toss the marinated chicken in the sweet potato starch mixture, ensuring an even coating.
Fry the Chicken
1. Heat oil to 350°F (175°C).
2. Fry the chicken in small batches for approximately 3 minutes or until light brown.
3. Remove the chicken and repeat with the remaining batches.
Double Fry for Crispy Texture
1. Bring all the fried chicken back into the hot oil for a second fry until they are crisp and golden brown.
Add Thai Basil
1. Fry fresh Thai basil for a minute and toss them with the fried chicken.
Season and Serve
1. Sprinkle the seasoning mix over the crispy Sichuan chicken.
2. Serve hot and enjoy the flavorful and crispy delight!
