- 2 large sweet potatoes
- 1 Red bell pepper
- 1 Yellow bell pepper
- 1 Yellow onion
- 3 clove Garlic
- 0.5 pack breakfast sausage
- 4 large brown eggs
- Chives, for garnish
- 2 tbsp Olive oil
- 1 tbsp Butter
- salt and pepper, to taste

1. Preheat your oven to 350 degrees.
2. Finely dice your sweet potatoes.
3. Place them into a pot of water and boil for about 5 minutes.
4. While the potatoes are in the pot, dice your onions and peppers.
5. Finely mince your garlic.
6. Your potatoes should be slightly softer but still have some stiffness to them.
7. Take the potatoes off the boil and drain completely.
8. In a large cast iron pan, cook your sausage.
9. Cook for about 80% of the way through and remove from the pan.
10. In that same pan, add your oil and butter.
11. Add your onions and peppers, slightly cooking them for about 3 minutes.
12. Add the salt and pepper and then add your potatoes.
13. Let the potatoes sit to slightly crisp up.
14. Once they crisp, add the breakfast sausage and minced garlic.
15. Make small pockets in your potatoes and add the eggs.
Oven Cooking
1. Place in the pan in the oven and cook for about 10-15 minutes or until the whites are fully cooked and the eggs are slightly runny.
