Enchilada Ingredients
- 0.5 Onion, finely chopped
- 4 clove Garlic, finely chopped
- 1 Sweet potato, small, diced
- 1 c Salsa
- 1 8-10 ounce package enchilada sauce
- 0.5 tsp Cumin
- 0.5 tsp Chili powder
- 0.5 tsp Paprika
- Salt, to taste
- Black pepper, to taste
- 1 can Black beans, drained
- 1 c cooked quinoa
- 1 bunch Cilantro, finely chopped
- 3 small tortillas

Heat oil and cook onions and garlic
1. Heat oil in a skillet over medium heat.
2. Add onions and cook for 5 minutes.
3. Add garlic and cook for another 3 minutes.
Add other ingredients and cook
1. Add sweet potatoes, spices, salsa, cilantro and enchilada sauce.
2. Cover and cook for 10 minutes, stirring occasionally.
3. Add black beans and quinoa.
4. Stir to combine and cook for 5 more minutes or until sweet potatoes are completely softened.
Add tortilla strips and cheese
1. Add tortilla strips and mix to combine.
2. Top with cheese and cover pan and cook for about 3 more minutes, until cheese is melted.
