- 200 grams salmon
- 3 nori sheets
- 1 c cooked sushi rice
- 0.5 Carrot
- 0.5 Lebanese cucumber
- 2 tbsp Soy sauce
- spring onions
- Kewpie mayonnaise
- chilli flakes
- Lime

1. Preheat the oven to 180 degrees.
2. Cook sushi rice to packet instructions.
3. Cut salmon into cubes and marinade with soy sauce and spring onions.
4. Cut nori sheets into 12 squares (3 sheets).
5. Spray muffin tray and carefully place each nori sheet pressing down with cooked rice as a weight to hold down.
6. Place an even amount of salmon on each.
7. Cook for 12-15mins in the oven, observing, so the nori doesn’t burn.
8. Remove from oven and place cucumber and carrot on top of each muffin.
9. Garnish with mayo, chilli flakes and lime.
