For the chickpeas
- 2 Tbs Maple syrup
- 1 tsp Sesame oil
- 2 tsp Soy sauce
- 0.5 tsp Garlic powder
- 2 cup Chickpeas, cooked in unsalted water
- 2 Tbs Green onion stems
To serve
- 2 cup Rice, steamed
- 0.25 cup Mixed sesame seeds
- 1 cup Soybeans, blanched
- 1 Avocado, quartered

For the chickpeas
1. In a bowl, mix the maple syrup, sesame oil, soy sauce, and garlic. Heat the teriyaki sauce, when it starts to boil, lower the heat to medium and let it simmer until it thickens. Add the chickpeas and coat perfectly with the sauce. Add the green onion right before removing from the heat.
To serve
1. Mix the steamed rice with sesame seeds and divide in 4 bowls. Serve the teriyaki chickpeas and soybeans on top.
2. Garnish with avocado and sprinkle with more sesame seeds.
3. Share and enjoy.
1. Slice the avocado right before serving or cover it with lime juice so it doesn’t brown and maintains it’s bright green color for a longer time.
