- 3 clove Garlic, chopped
- 1 bunch Chards, washed, disinfected and chopped
- 1 bunch Spinach, washed, disinfected and chopped
- 0.5 cup Walnuts, chopped
- 2 Tbs Olive oil
- pinch Fresh black pepper
- 1 kg pork matambre (pork loin)
- 2 Tbs Thyme leaves
- 2 Tbs Parsley, washed disinfected and chopped
- 0.25 cup Honey
- 2 medium leeks
- 2 Potatoes, in wedges

1. Preheat the oven to 200ºC/400ºF
2. In a bowl, mix the garlic, greens, walnuts, olive oil, salt and pepper. Stuff the meat with the mix, roll and tie to keep it from loosing its shape. In a separate bowl, mix thyme, parsley and honey and brush the meat with the blend.
3. On a baking tray, spread the leek and potato wedges. Place the matambre on top and cover with foil. Bake for 30 minutes, remove the foil and bake for 10 more minutes or until the meat browns and is well cooked in the center. Remove from the oven and rest for 5 minutes before slicing.
4. Slice the meat and serve with potato wedges and leek.
