Ingredients

Candied Walnut
- 1 tbsp Butter
- 3 tbsp Sugar
- 1 tbsp Honey
- 2 tbsp Water
- 30 Walnuts, whole
- 0.25 tsp Salt
Shrimp
- 1 lb Large shrimp, peeled and deveined (16/20 size)
- 1 tbsp Seafood seasoning
- 0.667 c Cornstarch
- 2 Egg whites
Sauce
- 0.25 c Kewpie mayo
- 3 tbsp Consensed milk
- 2 tbsp Honey
- 1 tbsp Fresh lemon juice
Garnish
- Black sesame seeds
- Green onion
- Vegetable oil or any neutral oil for frying

Directions

Step 1 - Creamy Sauce
1. Combine all the ingredients and stir until smooth. Set aside.
Step 2 - Shrimp
1. In a medium bowl, add shrimp and season. Set aside. TIP: To ensure the shrimp open up into a nice shape when fried, make a deep cut on the back of each shrimp
2. In another bowl, add egg white and whisk until foamy. Stir in cornstarch until it has a pasty consistency.
3. Add in the shrimp and mix until well coated.
4. Heat oil in a deep skillet over medium heat. Once it is ready, carefully fry shrimp in batches until golden brown, about 2-3 minutes, and drain on paper towel.
Step 3 - Candied Walnuts
1. In a pan, melt butter over medium heat
2. Add sugar, honey, salt and water and bring to boil.
3. Stir constantly and once the sauce has thickened, gently add the walnuts and transfer to a parchment paper-lined plate until the nuts have hardened.
Step 4 - Let's Stir it Up
1. In a bowl, transfer the shrimp, pour in the creamy sauce and 2/3 walnuts. Gently toss until well coated.
2. Sprinkle with the rest of the walnuts as well as black sesame seeds or green onion. Serve with steamed brocoli and white rice.
