Stuffed Mushrooms
- 10 baby bella mushrooms
- 2 tbsp Canola oil
- 0.5 Onion, finely chopped
- 4 clove Garlic, finely minced and only white parts
- 1 Scallion, finely chopped
- 1 jalapeños pepper
- 0.5 c Plain breadcrumbs
- 0.5 c Parmesan cheese, shredded
- 0.25 tsp Salt, or to taste
- 0.25 tsp Black pepper

1. Preheat the oven to 375 F.
2. Lightly clean them with a damp paper towel and remove the stems from the mushrooms.
3. Finely chop the stems along with garlic, onion, scallion, and jalapeños pepper.
1. Add oil to the skillet and add chopped onion and stems. Cook until the onions turn translucent and tender, about 4 minutes.
2. Add garlic, jalapeños pepper, and white parts of the scallion. Cook on medium-low heat for 2 minutes until fragrant.
3. Transfer to a heat-proof mixing bowl and let it cool down for a few minutes.
4. Season with salt and pepper. Add breadcrumbs and parmesan cheese. Mix well.
Final Steps
1. Place the mushrooms on a parchment paper-lined baking sheet. Fill the mushrooms with the fillings and bake in the oven for 15 minutes until the tops turn golden brown.
2. Garnish with cilantro and more cheese if you like.
