Ingredients

Stuffed Honeynut Squash
- 1 honeynut squash
Filling
- 1 c HV Veggie Ground
- 4 tbsp vegan mayo
- 4 tbsp Green onion
- 0.25 tsp garlic granules
- Salt, to your taste
- Pepper
- 0.5 Avocado
- 0.5 c vegan cheese sauce
- Chili flakes, to taste
- Bread crumbs, optional

Directions

Prepare the Squash
1. Cut your squash and remove the seeds.
2. Place cut side down on a parchment-lined baking sheet.
3. Bake at 400F for 30-45 minutes, or until you can pierce the squash easily with a fork or knife.
Prepare the Filling
1. Scoop out some of the cooked squash to make the cavity in the center larger.
2. Combine scooped squash, veggie ground, mayo, green onion, garlic, salt, and pepper in a bowl and mix.
Stuff the Squash
1. Stuff your cooked squash with the filling.
2. Top with mashed avocado, vegan cheese sauce, chili flakes, and optional almond bread crumbs.
