- 1 sheet of puff pastry
- 0.25 c freeze dried strawberries, crushed (optional)
- 1 Egg, + 1 Tbsp of water
Strawberry Rhubarb Jam
- 2 c rhubarb
- 2 c strawberry
- 0.5 c monk fruit sweetener
- 0.5 Lemon, zested
- 0.5 Lemon, juiced

Directions for preparing the filling
1. In a saucepan, add your rhubarb, strawberries, lemon zest, lemon juice, and monk fruit sweetener.
2. Bring to a boil and reduce until thickened.
Directions for preparing the pastry
1. Preheat your oven to 400F.
2. Cut your puff pastry into 4 even squares.
3. Add 2 tablespoons of jam to the middle and fold diagonally closed.
4. Crimp the edges with a fork to seal.

1. Beat your egg and tablespoon of water to create your egg wash.
2. Use a brush and brush each turnover with the egg wash.
3. Cut 2-3 small slits in your turnovers using a small knife.

1. Transfer your turnovers to a parchment-lined baking sheet and bake at 400F for 25 minutes or until golden brown.

1. While turnovers are baking, mix your milk, powdered sugar, and vanilla extract together to make your glaze.
2. Crush your freeze dried strawberries if using.
3. Allow turnovers to cool before drizzling with the vanilla glaze.
4. Top with crushed freeze dried strawberries.
