- 1 stick Unsalted butter
- 0.5 c Granulated sugar
- 0.25 c light brown sugar, packed
- 1 Large egg
- 1 tsp vanilla
- 2 tsp Honey
- 1.25 c Ap flour
- 0.75 c yellow cornmeal
- 1 tsp Baking powder
- 0.5 tsp Baking soda
- 0.5 tsp Salt
- 8 vanilla sandwich cookies
- 0.333 c dried strawberries
- 2 tbsp melted butter
- strawberry ice cream

For the cookie dough
1. Cream together butter and sugars.
2. Stir in egg, vanilla and honey.
3. Add flour, cornmeal, baking powder, baking soda and salt.
4. Mix until combined.
5. Chill for 1 hour.
For the strawberry crumb mixture
1. In a food processor, pulse the vanilla cookies and dried strawberries until coarse crumbs form.
2. Add melted butter and pulse once or twice more to combine.
3. Transfer to a shallow dish and set aside.
For baking the cookies
1. Preheat oven to 350F.
2. Line two baking sheets with parchment.
3. Scoop chilled dough with small cookie scooper and roll into balls.
4. Bake on prepared baking sheets until lightly golden brown, about 10-12 minutes.
5. Cool completely.
For assembling the ice cream sandwiches
1. Fill half with strawberry ice cream and sandwich together with remaining cookies.
2. Roll edges in the strawberry crumb mixture.
3. Chill for at least 4 hours or overnight.
4. Enjoy!
