- 2 lb sea bass
- 3 tbsp Soy sauce
- 1.5 tbsp Sugar
- 1 tbsp Sichuan Gold
- 1 knob Ginger
- Cilantro, a handful
- 3 bunches Scallion
- Shaoxing wine, a splash
- Neutral oil

1. Start off by mixing your sauce - sugar, soy sauce, and Sichuan Gold.
2. Chop cilantro and julienne ginger.
3. For half of the scallion, chop it into 2 inch pieces. For the other half, thinly slice and soak into an ice bath for 10 minutes. Then, drain.
4. Stuff the fish cavity with some ginger and scallion.
5. Splash a bit of shaoxing wine onto the sea bass.
6. Steam the fish for 15 minutes and remove the scallion and ginger.
7. Heat a pan with neutral oil until it starts smoking.
8. Top the fish with ginger, cilantro, and scallion.
9. Pour the hot oil over the fish and enjoy!
