- 6 cloves Garlic, finely minced
- 1 Scallion, finely chopped
- 3 Thai chili peppers
- 3 tbsp heated oil
- 2 tbsp Light soy sauce
- 1 tbsp Chinese black vinegar
- 1 tsp Sugar
- 1 tbsp chili oil

Washing and Cutting the Eggplants
1. Wash the eggplants and cut them into equally sized thin pieces.
Steaming the Eggplants
1. Place them in a steamer and steam over high heat for 10 minutes.
Preparing the Sauce
1. Add garlic, white parts of scallion, and Thai chilis in a bowl.
2. Pour heated oil to activate the flavors of the ingredients.
3. Add soy sauce, Chinese black vinegar, sugar, and chili oil.
4. Mix well.
