Tomato Sauce
- 7 campari tomatoes
- 1 medium onion
- 5 cloves Garlic
- 0.5 c roasted red peppers
- 1 tbsp white miso paste
- 1 tbsp smoked paprika
- 1 tbsp tahini paste
- 4 tbsp extra virgin olive oil
- 1 tbsp sun dried tomatoes
- 1 tbsp Calabrian chiles
- 2 tsp white pepper
- salt
- 0.5 bunch cilantro
- 0.5 bunch parsley
- 0.5 c extra virgin olive oil
- 0.25 c red wine vinegar
- juice
- 1 fresno chili
- 1 cloves Garlic
- 1 shallot
- 1 tbsp dried oregano
- salt and pepper
- 2 16 oz ribeye
- salt and pepper
- duck fat

Tomato Sauce
1. Place onion, tomatoes, and garlic on a sheet tray.
2. Add oil and salt then roast at 350ºF for 20 minutes.
3. In a blender, add roasted tomato, onion, and garlic.
4. Add whatever is left of the raw tomato, onion, and garlic, along with the rest of the specified ingredients except the olive oil.
5. Stream in the olive oil as it blends and then strain.
1. Finely chop cilantro and parsley.
2. Add to a bowl along with a finely diced shallot and fresno chili and a clove of garlic.
3. Dress with extra virgin olive oil, red wine vinegar, lemon juice, dried oregano, and season to taste with salt and black pepper.
4. Mix to combine.
1. Begin by patting steak dry with paper towels.
2. Season liberally with salt and pepper.
3. Heat duck fat in a pan over medium-high heat.
4. Once it begins to smoke, add steak to the pan.
5. Optionally baste with butter and aromatics, cook until desired doneness.
