Ingredients

- 4 oz rigatoni pasta
- 2 clove Garlic, minced
- 1 Onion, medium, diced
- 3 tbsp Olive oil
- 3 tbsp Tomato paste
- 3 Tomatoes, canned, peeled
- 0.333 cup Vodka
- 0.667 cup Heavy cream
- Mozzarella, freshly grated
- Parsley, dried, optional
Seasoning
- 0.5 tsp Garlic salt, or 1/4 tsp salt
- 0.5 tsp Black pepper, ground
- 0.5 tsp Red pepper, crushed
- 1 tbsp Oregano

Directions

Boil the Pasta
1. Bring a pot of water to boil, and add a pinch of salt then cook pasta according to package directions.
2. Drain the cooked pasta and reserve 1/2 cup of pasta water.
Prepare the Sauce
1. In a non-stick pan, heat olive oil over medium heat. Add minced garlic and diced onion. Cook for about 4-5 minutes until they become soft and slightly brown around the edges. Stir occasionally.
2. Add in prepared seasonings and tomato paste to the pan, mixing until well combined.
3. Pour in the vodka and stir until well incorporated, then add the peeled tomatoes. Gently crush the peeled tomatoes with a spatula or wooden spoon, then add heavy cream. Stir until well combined.
Combine
1. Once the sauce starts to simmer and slightly thicken, stir in cooked pasta, ensuring the pasta is thoroughly coated in the creamy sauce.
2. Add pasta water as needed to achieve desired sauce consistency.
Garnish & Serve
1. Plate the pasta and garnish it with freshly grated mozzarella cheese and dried parsley.
2. Enjoy!
