Chicken Tikka
- 1 lb chicken tenders
- 4 tbsp plain yogurt
- 2 tsp ginger & garlic paste
- 1 tsp Salt, according to your preference
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp Chili powder, (or cayenne)
- 0.5 tsp Kashmiri red chili
- 0.5 tsp chaat masala
- 0.25 tsp garam masala
- 0.25 tsp Turmeric powder
- 2 tbsp Lemon juice
- 1 tbsp Olive oil
- food color
Spicy Garlic Mayo
- 0.5 cup Mayonnaise
- 1 tsp Yellow Mustard
- 1 tbsp chili garlic sauce
- 0.25 tsp Garlic powder
- 0.25 tsp cayenne or red chili powder
- 0.25 tsp Paprika
Garlic butter
- 2 tbsp salted butter
- 1 tsp freshly chopped parsley
- 1 Garlic powder, a pinch
- 1 pack King's Hawaiian Original Hawaiian Sweet Rolls
- 0.25 Onion, thinly sliced (or as much or little as you like)
- 2 tbsp tamarind chutney
- 6 slices of cheese

Chicken Tikka Preparation
1. Cut the chicken into 1-2" cubes and mix with all ingredients in a bowl thoroughly.
2. Cover and rest for at least 1 hour but ideally 4-12 hours (overnight).
3. Turn your oven on the broiler setting and place the rack in the topmost shelf.
4. Thread the chicken onto 4-5 skewers (if using wooden skewers, first soak them in water so they don't burn). Place the skewers onto a baking dish such that the chicken is suspended in the air. Spray with oil.
5. Place the pan in the oven and broil for 7-8 minutes. Flip the skewers to the other side and broil for another 7-8 minutes until the chicken is nicely charred.
6. Remove from the oven and rest for 10 minutes. Then remove the chicken from the skewers and chop into smaller pieces. Toss the chicken in its juices on the chopping board to soak up all the flavor.
Spicy Garlic Mayo Preparation
1. Mix all the ingredients in a bowl. Taste and adjust as needed.
Garlic Butter Preparation
1. Melt the butter in the microwave and mix in the garlic powder and chopped parsley.
1. Pre-heat your oven to 350F (conventional).
2. Remove the Hawaiian Rolls from their packaging in 1 piece and slice into half horizontally. Place on a baking sheet with the cut side facing up.
3. Spread the garlic mayo on both sides - you want to use it all up.
4. Spread the chopped chicken on the bottom half and press down lightly so it sticks together.
5. Sprinkle over thinly sliced onions and drizzle the tamarind chutney.
6. Cover with cheese slices, then close with the top half of the buns and lightly press down.
7. Brush on the garlic butter, and bake for 5-7 minutes until the cheese melts.
8. Serve & enjoy.
