Main Ingredients
- 3 lbs Mutton/Goat meat
- 2 tbsp ginger purée
- 2 tbsp garlic purée
- 0.25 c Cooking oil
- 0.25 c Yogurt
- Salt, to taste
- red chili powder
- 1 tsp Turmeric powder
- 2 tbsp coriander powder
- 2 tbsp cumin powder
- 2 tbsp garam masala
- 1 tbsp dried fenugreek leaves
- 2 Onions, X-large, sliced
- Oil, to fry onions
Garnish
- Ginger, julienne
- 3 green chilies

Directions

Preparation of Goat Meat
1. Ask your butcher for goat back leg if you want the meatiest, most tender part of the animal.
2. In a pot add olive oil and once hot, pour in the ginger & garlic paste.
3. Then add the meat.
4. Let it change the color slightly before adding in the water.
5. Cover and let it pressure cook for 20-25 minutes.
Preparation of Onions
1. Slice the onions and deep fry it until golden brown.
Combining Ingredients
1. Once the meat is tender, transfer the meat in a shallow pan which has enough space to be stirred otherwise you might break apart the meat.
2. Now let the broth evaporate.
3. Then sprinkle in the spices.
4. Mix well.
5. Then goes the yogurt.
6. Once that’s mixed, add in the fried onions.
7. Mix and add green chili and julienne ginger.
Final Steps
1. Finally cover the pot and let the flavors marry for 5-10 minutes.
