- 2 sourdough bread slices
- 1 Avocado
- 5 oz brown mushrooms
- 1 clove Garlic, finely diced
- 1 tbsp Extra virgin olive oil, plus more for drizzling
- 0.5 c Parsley, chopped
- 1 Lemon, organic, zest, and juice
- pinch Salt
- cracked pepper
- 0.5 tsp Chili flakes, or to taste
- 2 tsp mixed seeds

Preparing the mushrooms
1. Clean and thinly slice the mushrooms.
2. Heat olive oil over medium-high heat and roast them with garlic until they are tender.
3. Sprinkle the parsley over the mushrooms.
4. Add half of the lemon juice and salt and pepper to taste.
Making the avocado spread
1. Mash the avocado with lemon juice and seasoning.
2. Spread half of the mashed avocado on each slice of toasted sourdough bread.
Assembling the toast
1. Place the mushrooms on top of the mashed avocado.
2. Finally, add lemon zest, drizzle some olive oil over the top, and sprinkle some seeds for a crunchy topping.
