- 1 Onion, finely diced
- 1 Eggplant, chopped into cubes
- 1 Zucchini, chopped into cubes
- 1 Red bell pepper, chopped into cubes
- 1 Green bell pepper, chopped into cubes
- 3 clove Garlic, finely diced
- 2 c Tomatoes, chopped
- 1 tsp Paprika
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 1 tbsp Olive oil

Directions

Preparation of Vegetables
1. Finely dice the onion and crush the garlic.
2. Then chop all the veggies into cubes.
Roasting and Simmering
1. Heat olive oil in a pan over medium-high heat.
2. Begin by roasting the onion with salt until translucent.
3. Add garlic and roast for another minute.
4. Add all other veggies and spices and let simmer for about 20–30 minutes until fully done.
5. Season with salt and pepper to taste, and serve hot with some crusty bread.
