Ingredients

Main Ingredients
- 1 tbsp oil
- 6 oz spam
- 1 cup kimchi with juice
- 2.5 cup cooked white rice
Optional Ingredients
- 1 Green onion, chopped
- 0.25 cup roasted seaweed
- 2 eggs
Sauce Ingredients
- 1 tbsp Soy sauce
- 1 tbsp Gochujang
- 0.5 tsp Sugar
- 1 tsp Sesame oil
- 1 tbsp water

Directions

1. In a small bowl, combine soy sauce, Gochujang, sugar, sesame oil, and water. Mix until well combined.
2. Heat 1 tablespoon of oil in a non-stick pan or skillet over medium heat. Add the diced spam and sauté for 2-3 minutes until it becomes brown and crispy. Stir occasionally.
3. Add the kimchi to the pan and cook for 30-60 seconds, until fragrant.
4. Add the cooked rice and use a wooden spoon or spatula to break apart the rice and get rid of any clumps.
5. Pour the sauce over the rice and sauté for a few minutes until everything is well combined, and each grain of rice is evenly coated with the sauce.
6. Taste the fried rice to check if it’s flavorful enough. Depending on the brand of the kimchi and how long it’s been fermenting, its taste could vary slightly. Adjust the taste to your liking and consider adding a little more sugar, soy sauce, or Gochujang, if desired.
7. (Optional step) Plate the fried rice and sprinkle some chopped green onions and crumbled roasted seaweed on top. You can also add a sunny-side-up egg on top because it pairs wonderfully with this fried rice.
8. Serve warm & enjoy!
