- 0.333 c Vegetable oil
- 12 Scallions, julienned
- 4 tbsp Dark soy sauce
- 3 tbsp Light soy sauce
- 6 tsp Sugar
- 400 g Chinese white noodles
- 2 tsp Sesame oil

Prepare the noodles
1. Prepare the noodles and set aside.
Prepare the scallions
1. Heat oil in a small pan over medium heat, add the white part of the scallions, and let it fry for a couple minutes.
2. Once it starts to wilt, add in the green part of the scallions.
3. Cook until golden brown, remove from oil and set aside.
Prepare the soy sauce mixture
1. To the oil, add the light and dark soy sauce and the sugar.
2. Use low heat and cook the mixture for about two minutes, until it starts to bubble up.
Combine and serve
1. Put the noodles in a bowl and add the soy sauce mixture.
2. Toss until evenly coated. Sesame oil and salt is optional.
3. Top the noodles with the fried scallions.
