Ingredients

- 4 cups Brussels sprouts
- 3 Tbs Olive oil
- 1 Tbs Balsamic vinegar
- 1 Tbs Red wine vinegar
- 1 Tbs Dijon mustard
- 3 Tbs Maple syrup
- 1 cup Parmesan cheese
- Salt
- Pepper

Directions

1. Preheat oven to 400F degrees.
2. Line baking sheet with parchment paper and set aside.
3. Bring large pot of salted water to boil. Wash Brussel Sprouts and cut off the ends. Once water is boiling, add in brussels sprouts and cook for 8-10 minutes until soft.
4. Remove from boiling water and pat dry. Wait 10 minutes for brussels sprouts to cool before adding them to a baking sheet.
5. Combine olive oil, balsamic, red wine vinegar, dijon, maple syrup , salt & pepper to a small bowl. Mix together until combined.
6. Add brussels sprouts to lined baking sheet.
7. Using a small cup or bowl, smash the brussels sprouts with the bottom of the bowl and pour mixture over top and toss together until combined. Top with ½ cup parmesan cheese and bake for 40 min.
8. Check on brussels sprouts half way.
9. Remove brussels sprouts from oven and top with ½ cup parmesan cheese and black pepper. Serve and enjoy!
