Peppermint Chocolate Protein Sheetpan Pancakes
- 2 c oat flour
- 2 scoops chocolate protein powder
- 2 Eggs
- 1 tsp Baking powder
- 0.5 tsp Baking soda
- 1 tsp Vanilla extract
- 0.5 tsp peppermint extract
- 2 tbsp Maple syrup, (plus extra for serving)
- 1.5 c Milk, of your choice

Directions

Preparation
1. Preheat your oven to 375°F (190°C) and line a sheet pan with parchment paper.
2. In a large mixing bowl, whisk together oat flour, protein powder, baking powder, and baking soda.
3. In a separate bowl, beat the eggs, and then add vanilla extract, peppermint extract, maple syrup, and milk. Mix until well combined.
4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
5. Pour the batter onto the prepared sheet pan, spreading it evenly.
6. Bake in the preheated oven for about 12-15 minutes or until a toothpick inserted into the center comes out clean.
7. Once done, let the sheet pan pancakes cool for a few minutes, then slice into squares or rectangles.
8. Drizzle with additional maple syrup and enjoy your hassle-free, protein-packed peppermint chocolate pancakes!
