Ingredients

Saucy Pork
- 1 tbsp Olive oil
- 1 lb Ground pork
- homemade taco seasoning mix
- 2 tbsp Tomato paste
Peach Pico de Gallo
- 1 peach
- 1 red tomato
- 0.5 Red onion, finely chopped
- 1 jalapeno
- 2 clove Garlic, minced
- 0.25 c Fresh cilantro, chopped
- 1 Lime, juiced
- Salt, to taste
- Pepper, to taste
Assembling the Tacos
- soft tortillas
- authentic Mexican cheese
- fresh cilantro leaves
- Lime wedges, for serving

Directions

Preparing the Pork
1. Heat olive oil in a skillet over medium-high heat.
2. Add ground pork to pan and season with homemade taco seasoning mix.
3. Using a spatula, break up the pork.
4. Add in tomato paste and mix well to combine.
5. Cook pork until browned for about 5 minutes then remove from heat and set aside.
Preparing the Peach Pico de Gallo
1. In a bowl, combine diced peaches, diced tomatoes, finely chopped red onion, jalapeno, garlic, and chopped cilantro.
2. Squeeze lime juice over the mixture and gently toss.
3. Season with salt and pepper to taste.
4. Refrigerate until ready to use.
Warming the Tortillas
1. Warm the tortillas according to package instructions.
Assembling the Tacos
1. Sprinkle Mexican cheese onto the tortilla.
2. Then spoon a generous portion of the saucy pork onto each tortilla.
3. Top with a spoonful of the peach pico de gallo and garnish with fresh cilantro leaves.
Serving
1. Serve with lime wedges on the side for an extra zing.
