Ingredients

Main Ingredients
- 1 tbsp Healthy Rican Savory Spice Mix (or Adobo)
- 2 lbs Chicken thighs, about 4 thighs (with or without bone)
- 1 tbsp Avocado oil
- 2 tbsp sofrito
- 1 tbsp Healthy Rican Sazón
- 1 lb stew beef
- 2 tbsp roasted red peppers
- 1 tbsp garlic paste
- 1 tbsp chicken bouillon
- 1 tbsp Tomato paste
- 0.5 c sliced onions
- 2 c Chicken Broth
- 1 tsp Oregano
- 3 Bay leaves
- 3 recao leaves
- 1 yuca/cassava roots
- 1 yautia roots
- 1 green bananas or green plantains
- 0.25 calabaza or winter squash
- 2 corn on the cob
Note:Note: The root vegetables vary depending on availability. It can be done with all, or a mixture of them. You find them in most Latin/Hispanic supermarkets in the produce section, or in the frozen area which is convenient because they come already peeled.

Directions

Seasoning the chicken
1. Season the chicken with your favorite seasoning.
Preparing the meat
1. In a large pot, over medium heat, combine the oil, sofrito, chicken, and beef, and stir until the meat is brown on all sides.
2. Add a bit of broth if the meat starts to burn or stick to the bottom.
Adding the ingredients
1. Add the sazón, broth, and rest of the ingredients with the exception of the root vegetables.
2. Cover and cook for 20 minutes.
3. Add the root vegetables and corn, and continue to cook for approximately 10 minutes or until the root vegetables are cooked and tender.
4. Add additional broth or water if needed until everything is covered.
Final steps
1. Remove some of the root vegetables, mash and bring back into the pot, mix well and continue to cook until the broth is thick enough or the consistency you like.
2. Serve and sprinkle cilantro on top if desired.
3. Can be served with rice or on its own as a hearty soup.
