Ingredients

- 4 Tbs Butter, unsalted and softened
- 1 Tbs Chives, chopped
- 1 cup Dried peas
- 1 tsp fresh tarragon, chopped
- 1 cup Leek, washed, disinfected and sliced in strips
- 2 tsp Lime juice
- 2 tsp Old-style dijon mustard
- 2 Tbs Olive oil
- 1 pinch Pepper
- 4 Salmon loins, with skin (160g each)
- 1 pinch Salt
- 3 cup Water

Directions

For the butter
1. Mix all the ingredients in a bowl until fully integrated. Place to the side.
2.
For the salmon
1. Quantities below are for original serving size of four.

In a small pot, add the dried peas, salt and water. Bring to a boil and lower the heat. Simmer for 15 to 20 minutes until they are soft but still hold their shape. Drain and keep ½ cup of the cooking water.
2. Heat 1 tbsp of olive oil in the same pot, add the leek and cook until it softens and turns translucent. Add the peas and 1 tbsp of your prepared butter. Cook while stirring constantly for 3 minutes, put the lid on and keep warm. If the peas turn too thick, add some cooking water to get your preferred texture.
3. Season the salmon with salt and pepper, heat the rest of the olive oil in a pan and sear the salmon; skin-side first until it’s crispy.
4. Add a tbsp of mustard butter to the pan a few minutes before it’s done; basting repeatedly with a spoon.
5. Serve over a bed of peas.
6. Share and enjoy.
