Ingredients

For the salmon
- 2 chipotle chiles in adobo
- 1 Tbs Canola oil
- 1 Tbs Fresh oregano
- 1 tsp Apple cider vinegar
- pinch salt and fresh black pepper
- 2 Salmon loins, skinless
For the bowl
- 1 tsp Olive oil
- 0.5 Red onion, sliced thinly
- 0.5 Red bell pepper, roasted, skinless and chopped
- 0.5 Green bell pepper, roasted, skinless and chopped
- 4 cup Quinoa, cooked
- 2 Tbs Sunflower seeds, toasted
- 1 Avocado, sliced
- 0.25 cup Cilantro, washed and disinfected

Directions

For the salmon
1. Blend the chipotles, canola oil, vinegar, salt and pepper.
2. Place the salmon in a tall dish and cover with the blended marinade. Rest for 15 minutes in the fridge.
3. Heat up a pan and cook the salmon for 4 minutes on each side. Slice in halves and place to the side.
For the bowl
1. Heat up the oil in a pan, add the onion, bell peppers and cook for 8 minutes or until they soften.
2. Split the quinoa around 4 bowls and lay on top a piece of salmon and a spoonful of vegetable mixture. Garnish the bowl with avocado slices and cilantro leaves.
3. Share and enjoy.
