- 2 Egg yolks
- 1 Tbs anchovy puree
- 1 clove Garlic, minced
- 0.5 Tbs Dijon mustard
For Salad
- 3 Tbs Lemon juice, fresh squeezed
- 0.5 cup Extra virgin olive oil
- 4 jumbo romaine lettuce hearts
- 2 cup freshly grated parmasean cheese
- freshly ground black pepper

1. Combine the egg yolks, anchovy puree, lemon juice, mustard in a bowl and whisk together till combined.
2. Slowly whisk in the olive oil till fully incorporated.
3. Heat a broiler to 500 F.
4. Lay out romaine halves on a tray and brush with ceasar dressing making sure to reach inner leaves. Generously cover with parmesan cheese and broil or bake till cheese is golden brown 3 to 4 minutes.
5. Serve immediately.
