- 1 lb baby Yukon gold potatoes
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 tsp granulated garlic
- 1 tsp granulated onion
- 0.5 tsp Paprika
- 0.5 tsp Oregano
- 0.5 tsp Rosemary
- 0.5 tsp Parsley
- 0.5 tsp Black pepper
- 2 tbsp Vegetable oil
- 0.5 small yellow onion
- 2 clove Garlic, minced
- 0.5 c evaporated milk
- 3 tbsp yellow aji paste
- 0.5 c queso fresco
- 4 saltine crackers
- 0.5 tsp Salt
- 0.5 tsp Black pepper

For the potatoes
1. Halve potatoes and place in a pot of salted water.
2. Bring to a boil and cook until almost fork tender. Not all the way.
3. Drain and toss together with olive oil, salt, and spices.
4. Spray inside of air fryer and place potatoes in a single layer.
5. Air fry on high for 20 minutes. Shaking halfway through.
For the sauce
1. Sauté the onion and garlic in oil until softened.
2. Pour into blender with the milk, aji paste, cheese, crackers, salt, and pepper.
3. Blend on high until smooth. If too thick, add a splash or two of water.
4. Serve with crispy potatoes and enjoy.
