- 2 cloves Garlic
- 2 tbsp Lemon juice
- 0.25 c Tahini
- 0.25 c vegetable broth
- 2 tbsp Fresh parsley
- 1 tsp cumin powder
- 1 tsp Salt, or to your taste

Directions

Preparing the Eggplant
1. Cut eggplant in half and bake cut side down at 400F for 20-30 minutes or until eggplant is soft and collapses.
Preparing the Hummus
1. Combine baked eggplant, chickpeas, garlic, tahini, broth, lemon juice, and spices in the food processor until smooth.
Final Touches
1. Sprinkle with paprika.
