- 1 carton Egg whites, 16 oz carton
- 0.5 c Mozzarella cheese, shredded
- 0.25 c cottage cheese
- 0.25 c Feta cheese, crumbled
- 0.25 c roasted red pepper
- 0.25 c Spinach, finely chopped
- 0.25 c Green onions, finely chopped
- Salt, to taste
- Pepper, to taste
- Cooking spray
- water, boiling

1. Preheat the oven to 350ºF. Place a silicone 12-cup muffin tray on a baking sheet and coat with non-stick spray.
Blending Ingredients
1. In a blender add the egg whites, mozzarella cheese, cottage cheese and feta cheese and blend until smooth and bubbly, about 30 seconds.
Filling the Muffin Tray
1. Divide the pepper and spinach into each of the silicone cups. Pour the egg white mixture on top, filling them close to the top, and season with salt and black pepper.
1. Place the baking sheet in the middle rack of the oven. Pour boiling water into the baking sheet about half of the way full up to the silicone liners.
2. Bake until the top of the egg whites are firm to the touch, 30-35 minutes. Allow to cool for 5 minutes before removing the silicone mold.
