- 1 c Whole Milk Ricotta
- 2 tbsp Heavy Whipping Cream
- 0.5 Lemon, juiced
- Zest
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Extra Virgin Olive Oil
- 2 tsp Honey or Maple Syrup
- 0.5 tsp Salt
- 0.5 tsp Black Pepper
- 1 Ciabatta Bread Loaf
- 0.5 c Red Raspberry Fruit Preserves
- Fresh Thyme

Preparing the Ciabatta Bread
1. Thickly slice the ciabatta bread.
2. Drizzle the 2 tablespoons of olive oil over both sides of the toasts.
3. Broil on HIGH for 2-3 minutes on each side, until crispy and golden brown.
Preparing the Whipped Cream
1. Whisk the heavy whipping cream in a mixing bowl until thick and soft peaks form.
Preparing the Ricotta Mixture
1. In a food processor or small blender, add the ricotta, remaining olive oil, juice of 1/2 lemon, maple syrup, salt, and black pepper.
2. Blend until smooth.
3. Add to the whipping cream and stir together until smooth, thick, and creamy.
4. Transfer to a piping bag with 1/2"" thick round tip.
Assembling the Toast
1. On each slice of toast, add a thin spread of raspberry jam.
2. Pipe the whipped ricotta on top.
3. Garnish with lemon zest, freshly cracked black pepper, flaky salt, and fresh thyme leaves.
4. Enjoy!
